The trade, stated plainly

Saigon, the Mekong, Angkor, Hanoi, Ninh Bình and Sapa is roughly a 16-day itinerary. In 10 nights you get about two-thirds of it. The three routes below are the three sensible ways to cut it — each is internally coherent rather than a rushed version of the full thing.

Down to Cần Thơ~3.5 hrs by private car, stopping in Bến Tre for coconut workshops. Ninh Kiều wharf at dusk. Dinner: cá lóc nướng trui, lẩu mắm. Stay riverside so the 5am start is painless.

Wed 16

Cai Rang at dawn → Cambodia5:00am private boat to the floating market — peak activity 5:30–7am, hủ tiếu handed between boats. Back to Saigon by early afternoon. VN813 5:15pm → Siem Reap 6:20pm. Night market, first fish amok.

Thu 17

Angkor — the big day4:45am tuk-tuk for sunrise over Angkor Wat. Then Angkor Thom, the Bayon's 200 stone faces, Baphuon, Terrace of the Elephants. Back by 1pm for the pool and the rain. Dinner at Marum.

Fri 18

Jungle templesTa Prohm (the strangler-fig one), Preah Khan, Neak Pean, Ta Som — quieter and stranger than day one. Optional Banteay Srei, 37km out, the finest carving at Angkor. Khmer BBQ and num banh chok in the evening.

Sat 19

Last Angkor morning → HanoiSunrise round two, or Phsar Chas market and a massage. VJ914 7:05pm → Hanoi 8:50pm. Old Quarter. Late bún chả or a bia hơi corner stool.

Sun 20

THE PHO PILGRIMAGE + Ninh Bình06:30 — Phở Gia Truyền Bát Đàn. Then egg coffee at Café Giảng. Drive ~2 hrs south to Ninh Bình for the afternoon: Trang An boat through three caves, or Mua Cave's 500 steps at sunset. Back to Hanoi that night, or overnight there.

Mon 21

One last bowl → home6am Bát Đàn round two, coffee-bean shopping, then OZ730 at 1:25pm → Seoul → KE75 → Vancouver 4:30pm the same day.

Why pick this: the two best eating cities in Vietnam plus Angkor Wat, at a comfortable pace, with the floating market and Ninh Bình both fitting. What you give up: Sapa and the northern mountains entirely.

Saigon & the MekongIdentical to Route A: three Saigon nights, the ốc crawl, Chợ Lớn, XO Tours, then down to Cần Thơ and the Cai Rang dawn market.

Wed 16

Fly Saigon → Hanoi~$120 for two on a domestic hop after the floating market. Old Quarter by evening.

Thu 17

Hanoi — the pho pilgrimage06:30 Bát Đàn. Egg coffee at Café Giảng or Đinh Café. Hoàn Kiếm, Train Street, Temple of Literature. Lunch at Tuyết Bún Chả 34, dinner at Chả Cá Thăng Long.

Fri 18

Down to Ninh Bình~2 hrs south. Trang An boat — three river caves, ~2.5 hrs, better than Tam Cốc and no hard-sell. Rent bicycles; it's flat and gorgeous. Goat (dê núi) is the local dish.

Sat 19

Ninh Bình → back to HanoiMua Cave at first light — 500 steps to the dragon viewpoint over the whole valley. Bích Động pagoda. Return to Hanoi in the afternoon.

Sun 20

Up to Sapa06:30 VIP-cabin limousine, arriving ~13:00. Acclimatize — 1,500m, 22–24°C by day, 15–18°C at night, a real relief after three weeks of delta heat. Skip Cát Cát village. Dinner: salmon hotpot from the cold streams here.

Mon 21

Valley trek → night bus backY Linh Hồ → Lao Chải → Tả Van, 9–12km, 4–6 hrs with a licensed Hmong or Dao guide. Then the evening bus to Hanoi.
⚠️ This is the tight day — it only works if your flight home is Sept 22 or later. On a Sept 21 return you'd cut Sapa to a single night.

Why pick this: cheapest by ~$540, one visa, no border crossing, and it gets you both Sapa and Ninh Bình. What you give up: Angkor Wat entirely — and the pace is brisk, with five bases in ten nights. Honest flag: this route really wants the 16-day option to breathe.

10–13

Saigon, condensedTwo nights instead of three. Prioritise: bánh mì Huỳnh Hoa, the District 4 ốc crawl, and either XO Tours or Chợ Lớn — not both. War Remnants Museum if there's a rainy morning.

Fly to Siem ReapAfternoon flight. Night market, fish amok, early night before the 4:45am start.

15–16

Angkor, unhurriedSunrise at Angkor Wat, Angkor Thom and the Bayon on day one; Ta Prohm, Preah Khan and Banteay Srei on day two. Three nights means you can spend an afternoon doing nothing. Marum for dinner.

Fly to HanoiEvening flight, lands 8:50pm. Old Quarter.

Fri 18

Hanoi — the pho pilgrimage06:30 Bát Đàn. Old Quarter walking, Train Street, egg coffee, chả cá for dinner.

Sat 19

Up to Sapa06:30 limousine, arrive ~13:00. Settle in, walk the ridge above town, salmon hotpot.

Sun 20

The full valley trekY Linh Hồ → Lao Chải → Tả Van with a licensed guide. Start before 9am, take the upper contour rather than the valley road. Night market on Lương Đình Của afterwards.

Mon 21

Fansipan or Tả Phìn → homeCable car at opening if the sky is clear (50–60% odds), otherwise Tả Phìn village and a Red Dao herbal bath. Afternoon bus to Hanoi for the flight out.
⚠️ Also tight on a Sept 21 return — this route is more comfortable on the 16-day option.

Why pick this: Angkor Wat and Sapa are the two things people remember from this part of the world, and this is the only route with both. What you give up: the Mekong entirely — no floating market — and Saigon gets short measure.

The places, in more detail

Sapa — the rice harvest will probably be over

An earlier version of this plan sold these dates on golden terraces. Vietnamese-language sources say otherwise. The Lào Cai provincial paper reports Sa Pa township aims to finish harvesting in mid-September, and VnExpress's ripening calendar sequences the regions explicitly: Sa Pa ripens first (done around Sept 15), then Mù Cang Chải mid-September, then Hoàng Su Phì from Sept 26. The "mid-Sept to mid-Oct golden season" repeated across English travel blogs is Mù Cang Chải's calendar misapplied to Sapa.

Roughly 60% odds the valley floor is cut stubble by the time you'd arrive. That doesn't sink Sapa — the terraces keep their stepped geometry, re-flooded plots reflect the sky, and the trekking, villages and cool air are unaffected. But go for the mountains, not the postcard.

If gold is the point: route the upper terraces above Hậu Thào / Giàng Tà Chải, which hold colour 1–2 weeks longer · or divert to Y Tý (3 hrs north, ~2,000m, ripens late Sept into mid-October, barely touristed) · or replace Sapa with Mù Cang Chải, which peaks in your exact window. Simplest move: message a Sapa homestay two weeks out — locals know to within days.

⚠️ Keep Sapa bookings refundable. Typhoons closed QL4D — the only road in — for about two weeks in October 2025.

Ninh Bình — the quiet winner

Limestone karsts, rice paddies and river caves two hours south of Hanoi; often called the "Ha Long Bay on land" and genuinely one of Vietnam's best landscapes. Trang An boat (three caves, ~2.5 hrs, 250,000₫) beats Tam Cốc for scenery and has no hard-sell. Mua Cave is 500 steps to a dragon statue with the valley laid out below — best at sunset. Bích Động pagoda nearby. Rent bicycles; it's flat.

It's also the low-weather-risk option — lowland, no mountain roads to close, which matters in a September itinerary.

Ha Giang — why it isn't any of these routes

It's the most spectacular road in Vietnam and it deserved a real argument. Three things settled it:

1. A Canadian licence doesn't work there. Vietnam recognises only the 1968 Vienna Convention; Canada is a 1949 Geneva signatory, so a CAA International Driving Permit has no legal standing in Vietnam — there is no version where you ride legally, which means uninsured. Ground medevac to Hanoi runs €4,000–8,000 and repatriation to Canada €30,000–80,000. As the driver in an accident you can also face criminal charges and an exit ban.

2. Two consecutive Septembers of closures. 2024: Typhoon Yagi, then a Sept 30 landslide at Km156 of NH4C closed Ma Pi Leng and stranded tourists. 2025: three storms from Sept 25 caused 85 dead or missing, ~1,400 road blockages, and landslides on Quản Bạ, the Yên Minh–Đồng Văn road and Ma Pi Leng.

3. It costs seven days door to door with a weather buffer — more than half this trip — and the food is basic, which matters when eating is the point.

Do it properly instead: 8–10 dedicated days in the first half of November, when it's dry and clear and the buckwheat is blooming across the plateau. Go by private jeep (~$650 per vehicle for three days) rather than bikes — you stay dry, you can talk to each other, and a car handles a wet mountain road far better than two novices. Ninh Bình above is the lower-consequence karst landscape that scratches a similar itch.
